Its flavour is gently grassy with a light, pleasant bitterness and a clean finish, and it brews pale gold to light green with a fresh, leafy aroma. Like all green tea, it comes from \u003cem\u003eCamellia sinensis\u003c\/em\u003e; the leaves are heated soon after picking to stop oxidation, which is why the leaf stays green. The leaves take a second steep well, usually a little softer than the first.\u003c\/p\u003e\u003cp\u003eAs a true tea, it contains naturally occurring caffeine.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eHow to use it\u003c\/strong\u003e\u003cbr\u003eUse one teaspoon per 250ml cup. Brew with water cooled to around 80°C and steep for two to three minutes, then strain. Hotter water or a longer steep pulls bitterness from the leaf, so a shorter steep keeps the cup lighter.
