How to use it

Use five or six whole berries in a braise, a pot of rice and peas or a jerk marinade, and fish them out before serving as you would a bay leaf. Grind them fresh for pumpkin pie, gingerbread and spiced biscuits, allowing about half a teaspoon for a standard batch. A few berries also work in mulled wine and in a pickling brine. Technique tip: crack the berries lightly with the flat of a knife before adding them whole, so the flavour releases into the liquid without leaving powder to strain out.
