Bagel Seasoning

A coarse seed and allium topping of black and white sesame seeds, poppy seeds, dried onion and garlic flakes. It is savoury and nutty with real crunch, and the toasted onion is what carries the smell of a bakery bagel tray.

It is built for texture as much as flavour, which is why it works as a finishing seasoning rather than a cooking one. The seeds supply the crunch and the dried onion and garlic the savoury backbone.

How to use it

Its home is on bagels, pressed into the dough before baking, but it goes much further: scatter it over avocado toast, salads, roasted vegetables and dips, or work it into homemade bread and crackers. Technique tip: brush the dough with egg wash or water and dip the top face straight into a shallow plate of the seasoning rather than sprinkling from above. A dip gives an even, dense coat and keeps loose seeds off the baking tray, where they scorch.
