Caraway Powder

Caraway Powder is Carum carvi ground fine, the same anise-like seed with its peppery warmth and bittersweet edge, but released all at once rather than held inside a whole crescent. The colour is a soft grey-brown and the aroma is noticeably stronger straight from the jar than the seed is.

This is the ground form. Ameen sells the whole seed separately, which is what you want when you need the visible speckle in rye bread or the crunch in sauerkraut. Reach for the powder when the flavour should disappear into the dish.

How to use it

Stir it into soups, goulash and cabbage braises where whole seeds would be picked out, work it into sausage and meatball mixes, or blend it into harissa and spice rubs. It also folds cleanly into cake and biscuit batters. Technique tip: ground caraway fades faster than the seed, so add it in the last few minutes of a long braise rather than at the start.
