Chia Seeds

How to use it

Stir three tablespoons of the seeds into a cup of milk or plant milk and refrigerate at least two hours, or overnight, for a chia pudding. A tablespoon also goes into a smoothie, over yoghurt, or into bread dough, and one tablespoon whisked with three of water and rested ten minutes makes an egg substitute for baking. Sealed in a cool cupboard they keep for a year or more. Technique tip: stir the pudding again after the first ten minutes, since the seeds sink and set in a solid layer at the bottom if they are left alone from the start.
