Eyebright Herb

Ameen Foods Eyebright (Euphrasia officinalis) is a lesser-known but historically treasured herb in traditional European herbal folklore. Recognized for its delicate white and purple flowers, Eyebright gets its name from centuries of traditional folk use.

How to use it

Steep a heaped teaspoon of the cut herb in a cup of freshly boiled water for eight to ten minutes with the cup covered, then strain through a fine sieve. The cut herb blends well with chamomile or fennel seed, which round out its dry, slightly grassy taste. Keep it in an airtight jar away from light. Technique tip: pass the strained liquid through muslin a second time if you want it clear, since the finely cut stem in this herb leaves a good deal of sediment.
