How to use it
Soak half a teaspoon of the crystals in a cup of water for six to eight hours, or overnight, until they swell into a soft clear jelly, then break it up with a fork and stir it into falooda, sharbat, a milk drink or a rose lassi. The swollen gel is used cold and adds body rather than flavour. Store the dry crystals sealed and away from damp. Technique tip: use plenty of water, since the crystals swell to many times their size and a scant soak leaves hard gritty cores in the middle of the jelly.
