Grind a quarter teaspoon of the seeds fresh in a mortar for a cake batter, a kheer or a pot of coffee, or add them whole to a rice pilau and a pot of chai. Working from seed saves splitting pods, and roughly six pods' worth of seed gives a quarter teaspoon ground. They also go into a garam masala blend. Technique tip: grind them with a pinch of sugar or salt from the recipe, which gives the pestle something to work against and produces a far finer, more even powder.
