Lindi Pepper

How to use it

Crush or grind the dried pods and add half a teaspoon to a curry base, a stew or a dry rub once the oil has warmed. Whole pods can be dropped into a simmering pot or into oil to infuse it and then lifted out. Start at half a teaspoon for four servings and adjust from there. Technique tip: shake out some of the seeds before grinding if you want the fruity flavour with less bite, since most of the sharpness sits in the seeds and the inner ribs.
