Madras curry is believed to originate in Madras, India in the 1640s ( now known as Chennai) and invented for the British merchants. It is also believed that it was originally created in England in the 1960s. Madras curry is not a specific recipe, and can be made many ways.
Madras powder is used for curry recipes and marinades; it is yellow because of the turmeric that is mixed in. It differs from other curry powders as it is made with more chilli pepper and mustard seed, making it spicier. It is versatile, as it can be used with either meat dishes, or vegetarian dishes.
