Rose Buds
Rose buds are whole, unopened flowers of Rosa centifolia, dried with the petals still furled. They keep their shape and a soft pink to deep red colour, and the scent is gently sweet and floral, nearer to rose water than to perfume, with only a light sweetness on the palate.
How to use it
Steep a few buds on their own, or alongside green or black tea, for a fragrant floral cup. They perfume cakes, pastries, jams and syrups, and a small number dropped into rice, a stew or a marinade leaves a quiet floral note behind the spice. Because they hold their shape, they also finish a plate or a drink well, and they are a staple of potpourri, sachets and natural fragrance blends. Add them near the end of cooking; long heat drives off the aroma that makes them worth using.
