White Sesame Seeds

White Sesame Seeds come from the Sesamum indicum plant, grown across Africa and Asia. They are small, flat and ivory coloured, with a light, nutty flavour and a gentle crunch, milder and sweeter raw than the toasted seed.

These are hulled seeds, which is why they are pale and even rather than beige and speckled.

How to use it

Use them for baking, cooking and garnishing: on breads and pastries, through stir-fries and salads, and as the base for tahini. Their subtle taste suits sweet and savoury dishes alike and gives a warm, golden finish. The technique tip: toast them dry in a pan over medium heat for two or three minutes, shaking constantly until they turn pale gold and start to smell nutty, then tip them straight out of the pan. They carry on cooking in residual heat and go bitter quickly if left in. For tahini, toast first, then grind while still warm so the oil releases and the paste runs smooth.
