



Afghani Tikka Masala
Afghan Tikka Masala is a bold ground blend of paprika, cumin, cayenne pepper, ginger, turmeric, coriander, cloves and cinnamon. The flavour is deep and smoky with mild heat, warm hints of cinnamon and clove, and a slightly earthy finish.
Tikka-style cooking is widely enjoyed across Afghan and South Asian cuisines, where marinated meats are cooked over high heat.
How to use it
Mix one to two tablespoons with yogurt, lemon juice and oil to make a marinade, coat the meat thoroughly, and let it sit for several hours before grilling, baking or pan-frying. It suits chicken, beef and lamb, and gives the meat a vibrant colour along with the flavour. Give the marinade the full several hours; the ginger and the acid need that time to work into the meat.
