Dried Peach Slices

Dried peach slices are ripe peaches cut and dried to a soft, slightly chewy slice in a deep gold to amber colour. They taste like peach syrup concentrated down: sweet, floral, with a mild tartness at the finish. Closer to a dried apricot than to a raisin, but rounder and less sharp.

These are cut as slices rather than dried in halves, which matters in the kitchen: they cook down quickly, portion straight into a batter or a pot, and stay tender instead of drying out into a hard leather that needs a long soak.

How to use them

Simmer them into compote or khoshaf with apricots and raisins, add them to Afghan and Persian rice dishes, or cook them down into a chutney or a sauce for grilled lamb and chicken. Chopped, they go into cakes, muffins, scones, granola and yogurt, and they work on a Nowruz platter or a cheese board with something soft and creamy. Technique tip: pour hot water or weak tea over the slices and leave them fifteen minutes before adding them to a stew or a cake, so they plump instead of drawing liquid out of the dish.
