Roasted Pistachio Kernels, Unsalted (Pista Maghz)

Roasted unsalted pistachio kernels are shelled pistachios taken through a roast that deepens the flavour into something warm, toasty and buttery, with the sweetness that comes forward in a roasted almond. They snap when you bite them rather than yielding, and the aroma is far stronger than that of a raw kernel.

The point of this listing is the roast without the salt. You get the cooked, aromatic flavour, ready to eat or ready to cook with, while keeping full control of the seasoning, which matters in baking and in any dish that is already salted. If you want salt on them, choose our roasted salted kernels. If you would rather roast your own, choose the raw kernels. If you want shells to crack, choose the roasted salted pistachios in shell.

How to use them

Chop them over qabili palaw, sholeh zard and saffron rice, fold them into halwa and sheer payra, or press them into baklava, where the roast stands up to the syrup. They make a good pistachio paste for kulfi and bastani without pushing salt into a sweet custard. Further afield, use them for pistachio crusted salmon, cookies and brownies, granola, or a plain bowl of nuts. Technique tip: warm them briefly in a dry pan just before serving to bring the aroma back.
