Ceylon Green Tea

Ceylon Green Tea is a plain loose leaf green tea from Sri Lanka, the island once known as Ceylon. Its flavour is gently grassy with a light, pleasant bitterness and a clean finish, and it brews pale gold to light green with a fresh, leafy aroma. Like all green tea, it comes from Camellia sinensis; the leaves are heated soon after picking to stop oxidation, which is why the leaf stays green. The leaves take a second steep well, usually a little softer than the first.

As a true tea, it contains naturally occurring caffeine.

How to use it

Use one teaspoon per 250ml cup. Brew with water cooled to around 80°C and steep for two to three minutes, then strain. Hotter water or a longer steep pulls bitterness from the leaf, so a shorter steep keeps the cup lighter. It is traditionally served plain, or with a slice of lemon or a little honey.
