How to use it
Drop eight to ten dried leaves into hot oil with mustard seed at the start of a tadka and let them crackle for about ten seconds before the rest goes in. They belong in sambar, rasam, coconut chutney and South Indian vegetable stir fries. Dried leaves are milder than fresh, so use rather more than a recipe written for fresh suggests.
