How to use it

Bloom a teaspoon in hot oil or ghee for about fifteen seconds until the seeds darken a shade and smell toasty, then build the dish on top of that. Whole seeds also go into jeera rice, a tadka for dal and a taco filling, and toast well for grinding into a fresh curry powder, with a teaspoon serving four. Technique tip: watch the colour rather than the clock, since cumin goes from toasted to burnt in about five seconds and burnt cumin is bitter through the whole pot.
