Dried Banana Coins, Unsweetened
These are slices of ripe banana dried into chewy, amber coins, with nothing added. No sugar, no oil and no coating, so the sweetness is entirely the fruit's own, deep and caramelised, closer to banana bread than to fresh banana.
They are not the crisp, fried banana chips sold in most trail mixes. Drying them without oil leaves them soft and chewy with a slightly sticky surface, and the colour ranges from pale gold to dark toffee from coin to coin.
How to use them
Eat them straight from the bag, pack them into lunchboxes, or chop them into granola, muesli, trail mix and overnight oats. They blend into smoothies, fold into banana bread and muffins for pockets of concentrated flavour, and sit well beside dates and nuts on a platter. Technique tip: toss chopped pieces in a spoonful of flour before folding them into batter so they stay suspended instead of sinking.
