Dried Crystallised Kiwi Slices

Crystallised kiwi slices are rounds of ripe kiwi dried and sugar infused until they turn chewy and half translucent, with the ring of tiny black seeds still visible through the middle. They taste tart first and sweet second, like a sharper, greener version of candied pineapple, and the bite is closer to a soft chew than to a raisin.

These are candied, not plain dried. The kiwi is infused with sugar as it dries, and that is exactly what keeps the slices soft and vivid green instead of shrivelled and brown. It makes them a confectionery style dried fruit, sweeter than the fresh fruit, and it is why the colour holds up on top of a dessert.

How to use them

Cut them into strips for a Nowruz or Eid sweets platter, scatter them over yogurt and rice puddings, or set them whole on cheesecakes, cakes and muffins where the green reads well against cream. They chop nicely into granola, trail mix and school snack boxes, and they sit well on a cheese board opposite something salty such as feta or aged cheddar. Technique tip: the slices stick to each other in the bag, so chill them for ten minutes before chopping and they will separate cleanly instead of tearing.
