Kashmiri Chili Powder

Kashmiri Chili Powder is a vibrant red chili powder known for its brilliant color and mild to moderate heat. Made from sun-dried Kashmiri chilies, this powder is prized in Indian cooking for adding a deep red hue and gentle warmth without overwhelming spiciness.

Kashmiri Chili Powder has a slightly sweet, mildly smoky flavor and is commonly used in dishes such as rogan josh, tandoori marinades, curries, and spice blends. Its smooth texture helps it incorporate easily into sauces, rubs, and marinades, making it ideal for both everyday and traditional recipes.

How to use it

Use one to two teaspoons in a rogan josh, a tandoori marinade or a tomato curry base where you want deep red colour without much heat. Bloom it in warm oil or ghee for about ten seconds before the tomatoes go in, which sets the colour. It also tints a yoghurt marinade and a biryani beautifully. Technique tip: take the pan off the heat for those ten seconds of blooming, since the pigment that gives the colour scorches to brown at full frying temperature.
