Organic Bai Mu Dan White Tea is a loose, whole leaf white tea from China, made from young tea leaves and silvery, downy buds that are simply withered and dried. Bai Mu Dan means white peony, and the cup lives up to the name: pale golden apricot in colour, with a soft floral aroma, notes of melon and honey and a gentle, mellow sweetness with very little astringency. The dry leaf is a mix of sage, olive and silver tones, light and bulky in the jar.
As a true tea from Camellia sinensis, it contains naturally occurring caffeine.
How to use it
Use one to two teaspoons per 250ml cup, since the whole leaves are light and bulky. Brew with water around 80 to 85°C and steep for three to five minutes. The leaves give two or three good infusions, each a little longer than the last, and the later cups turn sweeter and rounder. Enjoy it plain, or chill the brewed tea and pour it over ice.
