Organic Raw Cacao Beans

Organic raw cacao beans are whole cacao seeds that have been fermented, cleaned and dried, then left unroasted. They are dark brown and oblong, with a thin, papery skin that slips off easily, and inside is the pure cacao nib: deep chocolate flavour, pleasantly bitter and fruity, with nothing added.

Because they are never roasted, these beans keep the full character of the cacao they came from. They are certified organic and grown in Peru, and they are the raw starting point for all chocolate, so you can take them exactly as far as you like at home.

How to use them

Peel and eat the nibs as they are, or crush them over yogurt, granola, oatmeal and smoothie bowls. Grind peeled beans in a coffee or spice grinder for raw cacao to blend into smoothies, energy balls and hot drinks, or use a coarse grind in a rub for beef and lamb. For a classic chocolate aroma, roast them lightly at home, then peel and grind for homemade chocolate or cacao butter bark. Technique tip: warm the beans for a few minutes in a dry pan or low oven before peeling; the skins crack and lift away in seconds.
