Zhourat Flower Tea

Zhourat Flower Tea is our take on the Levantine flower infusion, a loose blend of rose petals, chamomile flowers, lemon verbena, hibiscus flowers, peppermint, sage and lavender. The dry blend looks like potpourri and brews a light rosy pink, with a floral aroma, a gentle tartness from the hibiscus, a hint of lemon from the verbena and a clean, cooling finish from the peppermint. Zhourat, from the Arabic word for flowers, is the name used in Syria and Lebanon for mixed flower and herb tisanes like this one.

None of the ingredients comes from the tea plant, so this infusion is naturally caffeine free.

How to use it

Use one heaped teaspoon per 250ml cup. Pour over water just off the boil, cover and steep for four to five minutes, then strain. Keep the steep under six minutes, since sage and lavender turn harsh when over-brewed. Enjoy it plain or with a little honey, or chill it and pour it over ice with a slice of lemon for a pale pink iced tea.
