Dried Pineapple Rings

Dried pineapple rings are whole rings of ripe pineapple dried until they are chewy and deep gold, with the core hole still in the middle. The flavour is concentrated pineapple, sweet up front with the familiar acidic bite behind it, and the texture is dense and slightly fibrous rather than soft.

The ring shape is the point. Most dried pineapple is sold as chunks or wedges, but these keep the full slice, so they hold their shape on a cake, on a platter or over the rim of a glass, and you can cut them down to any size you want yourself.

How to use them

Use them whole on cakes, cheesecakes and upside down bakes, or lay them out on a Nowruz or Eid sweets platter. Chopped, they go into trail mix, granola, energy bars, yogurt bowls and fruit cake. In cooking they suit sweet and sour chutneys, sauces for grilled chicken and lamb, and rice dishes that want a tropical note. Technique tip: soak a ring in warm water for twenty minutes to soften it enough to bake into a batter, or leave it dry if you want the chew to stay.
